Spicy Egg Salad #1
1 teaspoon Sriracha
1 teaspoon Dijon mustard
1 teaspoon fresh lemon juice
1 small garlic clove, minced
¼ teaspoon salt
⅛ teaspoon cayenne
⅛ teaspoon black pepper
6 hard boiled eggs, peeled and diced
¼ cup celery, thinly sliced
2 tablespoons chives, finely chopped
6 slices bacon, cooked crisp and crumbled
Combine the mayonnaise, Sriracha, Dijon mustard, fresh lemon juice, minced garlic, salt, cayenne, and black pepper in a small bowl. Whisk to combine. In a medium bowl, fold together the diced hard boiled eggs, sliced celery, chopped chives, and crumbled bacon. Then, fold in the sauce mixture. Cover and chill until ready to serve.
