Scrapple #8 - Apple Scrapple Hash
3 tablespoons cooking oil
3 medium potatoes, diced
1/2 cup onion, diced
1 apple, diced
1/4 cup apple butter
1 tablespoon apple juice
Salt and pepper to taste
Cut scrapple into 1/2-inch slices. Crisp all sides in skillet. Remove from heat and allow to cool. In a hot skillet with 3 tablespoons of cooking oil, cook potatoes until brown and soft, adding salt and pepper to taste. Add onions and cook until onions are translucent. Add apple, apple butter and apple juice. Reduce heat to low, fold mixture until mixed and cover for 5 minutes. Fold crisp scrapple into mixture and serve.
