Spanish Garlic Scallops

3 tbsp extra virgin olive oil
4 cloves garlic
8 king scallops
2 tbsp finely chopped parsley
1/2 tsp sweet smoked Spanish paprika
dash sea salt
dash black pepper

Heat a large fry pan with a medium-high heat. Meanwhile, roughly chop 4 cloves of garlic and pat dry 8 king scallops with paper towels, season with sea salt & black pepper on both sides. After heating the pan for about 7 to 8 minutes, add in 3 tbsp extra virgin olive oil and start adding the scallops into the pan, all in a single layer. After 90 seconds flip the scallops to cook the other side, after another 90 seconds and the scallops have a crusty sear on both sides, remove the pan from the heat. Transfer the scallops in a single layer into a serving dish. Heat the same pan with a low-medium heat, add in the chopped garlic and mix with the olive oil, after 30 seconds add in 1/2 tsp sweet smoked paprika, turn off the heat and mix together. Pour the sauce over the scallops and top off with finely chopped parsley, serve at once, enjoy!
