1 can (14.5-oz) sweet peas
1 can (14.5-oz) whole kernel corn
2 cans (14.5-oz ea) cream-style corn
About 1 pound potatoes, scrubbed, sliced, fried
Onions with the fried potatoes (optional)
Extra-virgin olive oil to fry potatoes
NO added salt or other spices!

Wash, slice and fry potatoes in EV olive oil and set aside. Optional: onions go well with fried potatoes In a large sauce pan combine the peas, corn and cream-style corn and heat thoroughly. Here's where you have an option. Either combine the vegetables with the fried potatoes or serve the mixed vegetables as a healthy and thick gravy topping. Either way, they are scrumptious. No cholesterol, low-sodium. A great warmer-upper.
