Nachos - Queso Blanco, Beef & Bean Nachos

2 C. white American cheese
1 C. half and half
2 jalapenos, finely diced
Salt and pepper to taste
½ tsp. chili powder
½ tsp. cumin
1 lb. lean ground beef
3 cloves garlic, minced
1 can kidney beans, drained and rinsed
1 red onion, diced
1 lb. bag tortilla chips
1 C. mozzarella cheese, shredded

In a double broiler (or a glass bowl over a saucepan of boiling water), gradually melt white American cheese and stir in half and half. Once evenly melted, stir in jalapenos, salt, pepper, chili powder, and cumin. Stir well and remove from heat. In a large skillet, heat oil and sauté onion and garlic while browning beef until cooked through. Layer chips, beef, beans, and queso in a greased baking dish. Top with mozzarella and broil for 3 to 4 minutes to melt cheese, heat beans, and crisp chips.
