Pizza - Puff Tomato Cheese Pizza

A little about categorizing bread. Our system is not scientific by a long shot. We've placed them into table, flat, dessert, and fried. Table bread may include loaves of sandwich-type bread or something designed to serve as a loaf or dinner bun at the table. Flat is generally un-yeasted bread that is flat (duh!). Fried can be pan-fried or deep-fried. Dessert is for delectables such as banana bread. The words dressing and stuffing are interchangeable, depending where you live. Many will contain bread, others may not. This is dizzying.

Pizza - Puff Tomato Cheese Pizza

1 pre-made pie crust or puff pastry
1 tablespoon butter melted
7 ounces firm mozzarella thinly sliced
5¼ ounces fontal cheese
2 ripe tomatoes thinly sliced
1½ teaspoons oregano
1 teaspoon basil
½ teaspoon salt
1¼ tablespoons olive oil for drizzling
3 fresh basil leaves

Pre-heat oven to 375° oven. Spread the puff pastry on a lightly greased medium size pizza pan, brush the pastry with the melted butter, top with first the thinly sliced mozzarella, then the thinly sliced fontal cheese, and finally top with the thin slices of tomato (if they are really seedy i remove the seedy pulp) sprinkle with salt, oregano and basil, drizzle with olive oil and bake in a the pre heated oven for approximately 35 minutes, remove and top with chopped fresh basil. Serve immediately.
