Cookie - Old-Fashioned Molasses Sugar Cookies

3/4 cup shortening, slightly melted
1/2 cup brown sugar, lightly packed
1/2 cup white sugar
1/4 cup molasses
1 large egg
2 cups unbleached flour or all-purpose flour
2 teaspoons baking soda
1/4 - 1/2 teaspoon ground cloves
1/4 - 1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup white sugar, for rolling

Preheat oven to 375º F and line baking sheets with parchment paper. To a large bowl add the slightly melted shortening, both sugars, molasses and the egg. Blend together on low speed, then mix at medium-speed approximately a minute. In a separate bowl, whisk together the flour, baking soda, cloves, ginger, cinnamon, and salt. Add the dry ingredients to the wet ingredients and mix at low speed until well combined again. Cover and chill for 1 hour. Scoop dough with a small cookie scooper, roll in sugar and place them on baking sheets lined with parchment paper. Bake in a preheated oven 8-10 minutes, or until they crack on top and the bottoms and edges are browned but not too dark. Cool on baking sheets a few minutes and eat them warm! Or, cool completely and store them in an airtight container.
