Cookie Bar - White Chocolate Blueberry Bars
½ cup sugar
½ cup white chocolate chips
1 package blueberry muffin mix
1 tablespoon corn starch
1 tablespoon water
½ cup melted butter
¼ cup milk
3 tablespoons melted salted butter
1 egg
In a saucepan over medium heat, combine the sugar and blueberries. Use a wooden spoon to mash the fruit while it cooks. Boil the mixture and cook for 2 minutes before removing the pan from heat. Stir the cornstarch and water until it’s dissolved and then pour this mixture into the blueberries, stirring constantly. Stir until the mixture thickens. Put 1 cup of the muffin mix in a bowl and set the bowl aside. Pour the remaining mix into a large bowl and stir in the melted butter, egg, chocolate chips, and milk. Mix until the dough is thick and then scoop the dough into a greased pan. Press the dough down into an even layer. Pour the blueberry mixture on top in an even layer. Mix the salted butter with the small bowl of muffin mix and when a crumble forms, sprinkle it over the pan. Bake for 50 minutes. Chill for 2 hours before serving.
