Kale - Kale Salad With Hard Grated Cheese & Lemon Dressing
2 tablespoons lemon juice
1 shallot (thinly sliced or finely chopped)
1/8 teaspoon sea salt
1/4 cup finely grated hard cheese(plus more for garnish—cheese such as Parmigiano-Reggiano, Grana Padano, Pecorino or Dry Jack works well)
2 tablespoons walnut oil
2 tablespoon olive oil
Place the chopped kale in a large salad bowl. In a smaller bowl combine the lemon juice, shallot, and salt. To mellow the flavor of the shallot a bit, let this mixture set for 10 minutes. Add the grated cheese. Whisk in the oil. Pour the dressing over the kale and toss well. Grate additional cheese over the salad. Serve immediately or let the salad sit for awhile to soak up the dressing.
