3 hard boiled eggs, chopped
3-4 TBS mayo
1/2 c. finely chopped white onion
1 c. shredded sharp cheddar cheese
Salt and Pepper to taste
In a large bowl combine peas, eggs, onion and cheese. In a small bowl whisk together mayo, salt and pepper. Pour over pea mixture. Toss gently to coat. Chill at least an hour before serving.
