Shepherd's Pie - Shepherd's Pie (Malta)

6 peeled and chopped potatoes
Salt and Pepper
1 ½ spoon of olive oil
3 ½ spoons of butter
2 medium sized chopped onions
1kg round ground beef (or lamb) mince
6 chopped carrots
2 cups peas ( i prefer the canned ones but you can use fresh or frozen)
3 spoonfuls of kunserva (tomato paste)
2 spoonfuls of flour
2/3 cup of peas (fresh or frozen)
2/3 cup of broth
A handful of chopped parsley
1/3 cup of Cheddar cheese
¼ cup of milk
1 bottle Hopleaf Pale Ale

Preheat the oven at a temperature of 410 F. Throw in a pinch of salt in a saucepan and then boil the potatoes in it for around 15 minutes. Drain them and place them in a bowl. In another saucepan insert some olive oil, peas, the celery, carrots and onion. Stir for 5 minutes. Include the lamb mince or ground beef, and stir for another 5 minutes until there are no more lumps and it also changes color. Add the ale and mix well with meat. Add the flour, broth, salt and pepper and heat for around 25 minutes at a low temperature. Add the peas (if you are using frozen ones mix them half way when you are cooking the carrots). In another pan soften the butter. In the meantime mash the potatoes well. In the pan place the potatoes, milk, salt and pepper. Place the beef mixture in a baking dish and then put the potato mixture on top. Sprinkle the cheddar cheese and parsley on top. Bake for 25 minutes and then it is ready to be served.
