Pie - Peanut Butter Pie
3/4 cup graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
1/2 cup chocolate chips
3/4 cup heavy whipping cream
6-oz cream cheese, softened
10 Tbsp crunchy peanut butter
6 Tbsp whole milk
10 Tbsp powdered sugar
Preheat oven to 350ºF. Combine peanuts, graham cracker crumbs, sugar, and melted butter. Press into the bottom and up sides of a 9-inch pie plate. Bake for 10 minutes. Remove from oven and immediately sprinkle bottom of crust with chocolate chips. Once chips are melted, spread into a thin layer. Using an electric mixer, whip heavy cream until soft peaks form. Set aside. Using the same mixer, beat together cream cheese and peanut butter. Add milk and powdered sugar. Carefully fold whipped cream into peanut butter mixture. Pour peanut butter filling into baked crust. Cover and freeze until firm or overnight. Remove from the freezer allow to thaw for 30 minutes on the counter before serving.
