Cake - WWII War Cake #1

The home-canning recipes are not for amateurs, but to be used by those with experience and knowledge of how to safely can food and properly use equipment. See your local county extension service on classes and information before you EVER attempt to home-can food. Our parents and grandparents did it - so can you!

1 cup packed brown sugar
1 1/4 cups water
1 cup raisins
1 cup chopped walnuts
1/2 cup chopped candied citron
1/3 cup shortening
1/2 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 cups all-purpose flour
5 teaspoons baking powder

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan. In a large saucepan over medium heat, combine brown sugar and water. Add raisins, nuts, candied citron, shortening, salt, nutmeg, and cinnamon; bring to a boil and boil 3 minutes. Remove from heat and cool. Sift in flour and baking powder; stir until well blended. Pour into prepared pan. Bake at 350 degrees F (175 degrees C) for 45 minutes or until a toothpick inserted in center comes out clean. Remove from oven and cool on a wire rack.
