Shepherd's Pie - Sweet Potato Shepherd's Pie

6 cups mashed sweet potato
1/4 cup margarine
2 cloves minced garlic
2 tbsp olive oil
2 lbs extra lean ground beef
1 yellow onion diced
1/2 tsp salt
1/2 tsp pepper
1/2 cup water
Brown Gravy Mix (2 packets)
1 1/2 cups frozen peas
1 1/2 cups frozen corn

Preheat oven to 400F. Wash sweet potatoes and pierce them 5 or 6 times with a fork. Place sweet potatoes in the microwave and cook on high for 5 minutes for the first potato and add 2 minutes for each additional potato. Allow potatoes to cool while you prepare the meat. Put the olive oil and extra lean ground beef in a large skillet over medium heat. Add the diced onion, salt and pepper and cook until no pink remains. While meat cooks cut the sweet potatoes in half and scoop the flesh into a mixing bowl. Add 1/4 cup margarine and 2 cloves minced garlic to the sweet potatoes. Mash with a potato masher until no large lumps remain. Add 1/2 cup water and the two packets of brown gravy mix to the meat. Stir until all the meat is coated in the gravy. Transfer the meat into a 9 x 13" baking pan. Sprinkle the peas and carrots over the meat. Spread the sweet potatoes over the ingredients in the baking pan. Place in 400F oven for 40 minutes. When cooked allow to cool for a few minutes before serving.
