Southern Bologna Casserole

Elbow Macaroni ( half cooked, reserve some water)
14.5oz can of diced tomatoes
1 green bell pepper diced small
1 pound bologna from the deli ( un-sliced and diced into bite sized pieces)
Hot Sauce
1 tablespoon veg oil

In a large skillet, heat oil and add bologna. Cook until just staring to brown, then add bell pepper. cook until the start to go soft, about 5-6 minutes. Add tomatoes, juice and all and stir well. Add half cooked noodles and fold them in. Add a few tablespoons of the starchy water. cook on me low for about 8-10 minutes. Salt an pepper to taste. Let your family add the hot sauce after serving.
