Khasi Ko Masu (Nepalese Mutton Curry)

2 lbs. Mutton (Boneless or With bones
2 tsp. Cumin Seeds
1-1/2 tsp. Fenugreek Seeds
2 tsp. Fennel Seeds
3-5 whole cloves
2 tsp. Black Mustard Seeds
2 Cinnamon sticks, halved
2 Cinnamon leaves, hand crushed
Salt (According to taste)
2 tsp. Turmeric powder
1 large onion, finely sliced
1-3 Green Chilies/Serrano Peppers
1/2 cup oil
1 large Tomato, finely chopped
1 TBsp Cumin Powder
1 TBsp Coriander Powder
2 TBsp Meat Masala
1 TBsp Red Chili Powder
2 TBsp Ginger-Garlic Paste
3 cups water

In a pressure cooker, heat oil and add cinnamon leaves, cinnamon sticks, cloves, cumin, mustard, fenugreek, and fennel seeds. Fry until brownish black. Add onion and serrano pepper (Green Chilies) and fry until golden brown. Add mutton, turmeric powder and salt. Cover, stir and cook on a heat between medium and high for 15 minutes. Make sure to stir periodically until meat looks slightly red and crispy. Add ginger-garlic paste, tomatoes, cumin, coriander, meat masala, and red chili powder. Stir, cover and cook for another 5 minutes. Add water and stir couple of times. Close the pressure cooker lid and on a medium heat cook it until it whistles thrice.
