Green Chili Stew
2 lbs cubed, cooked chicken, shredded
1 onion chopped
10 oz diced tomatoes
1 1/2 cups chicken broth
One4-oz can chopped green chilies
2 large potatoes, cubed
1 teaspoon garlic salt
1 teaspoon ground cumin
Salt to taste
Black pepper to taste
Add oil and cook chopped onions in large pot. Pour in diced and shredded chicken, diced tomatoes and chilies, chicken broth. Stir in garlic salt, cumin, and salt and pepper to taste. Bring to boil and simmer for one hour. Add more broth if needed. Add chopped potatoes and cook for 30 minutes. Serve with flour or corn tortillas.
