Cabbage - Cabbage and Egg Salad

Vegetable dishes are generally filed according to the primary or main ingredient. This is not an exact science but in the case of some vegetable salads, we'll put a copy here if it has another main vegetable component other than basic salad ingredients. NOTE REGARDING PICKLES & FERMENTED: Pickled and fermented vegetables are filed here; pickled or fermented fruit, meat and seafood are filed in their respective categories. Additionally, all beans (including green and wax) are filed in the bean category.

Cabbage - Cabbage and Egg Salad

4 cups shredded cabbage
½ cup finely chopped green onions
2 cloves garlic, crushed
4 Tbsp. olive oil
3 Tbsp. vinegar
¾ tsp. salt
½ tsp. pepper
¼ tsp. cayenne pepper
4 hard-boiled eggs, chopped
12 pitted black olives, sliced in half

Place cabbage and green onions in a mixing bowl; set aside.

Combine garlic, olive oil, vinegar, salt, pepper, and cayenne, then pour over cabbage and green onion mixture. Mix thoroughly, then place on a serving platter. Spread eggs evenly over top, then decorate with olives and serve.
