DOUGH:
2 1/2 teaspoons rapid rise yeast (1 packet)
1 cup warm water
2 1/2 cups all purpose flour
2 teaspoons honey
1 teaspoon table salt
2 tablespoons olive oil
PIZZA:
2 tablespoons olive oil
2 cups sharp cheddar cheese, shredded
2 cups provolone cheese, shredded
1/4 pound deli roast beef, chopped into bite sized pieces
1 green pepper, chopped
1/2 of a small purple onion, chopped
Pizza Sauce: use about 1 cup of sauce, oe however much you’d like
Pre-heat your oven to 450 degrees. In a large bowl combine water and yeast and stir until the yeast is dissolved. Add in flour, honey, salt and olive oil and use a wooden spoon to combine. Once the ingredients are well combined with the spoon, use your hands to knead the dough for a few minutes. Form the dough into a ball and let it rest for 10 minutes. Spray a 16 inch pizza pan with non-stick cooking spray. Roll the dough out into a 16 inch circle. Roll the edges of the dough a bit. Brush the crust with 2 tablespoons olive oil and pre-bake the crust in the oven for about 8 minutes. While the crust is pre-baking, heat half a tablespoon of olive oil over medium heat and sauté the onions and peppers until tender. Season with a bit of salt and pepper. Spread sauce on the pre-baked crust. Top with cheddar and provolone cheese, chopped deli roast beef, and the sautéed peppers and onions. Bake for an additional 10-12 minutes, or until the crust is crispy and the cheese is melted. Cut into slices and enjoy!
