Tomato - Tomato, Basil & Feta Salad
1 cup basil leaves, packed plus a few extra leaves for garnish
1/3 cup olive oil
1 tablespoon apple cider vinegar
Juice from one lemon
1 teaspoon lemon zest (optional)
2 1/2 lbs of tomatoes
6 oz feta cheese
salt and pepper to taste
Peel garlic clove and chop in mini food processor. Add basil leaves and continue to process. Add olive oil, apple cider vinegar, lemon juice, and lemon zest to the food processor, and continue to blend. Add salt and pepper, if you'd like. Chop tomatoes and crumble feta cheese. Mix together. Toss with dressing.
