Purslane & Mint Salad (Glistirida)

2 cups purslane leaves
1.5 tbs dried mint
3 diced Lebanese cucumbers
1.5 tbs red wine vinegar
1 tbs olive oil
salt to taste

Dice the cucumbers and add the purslane (add more cucumbers or purslane depending on your preference, you can’t really go wrong). Sprinkle dried mint, red wine vinegar, olive oil and sat and toss together. Enjoy!
