Rice - Three Sisters Rice (Algonquin)

2 1/4 c. chicken broth (use water to make vegetarian)
1 6 oz. package Uncle Ben's Long Grain & Wild Rice
pinch of salt to taste
2 c. cubed yellow squash (about 1 medium)
2 c. cubed zucchini (about 1 medium)
2 c. baby lima beans
2 c. whole kernel corn
1 red bell pepper, chopped
1 green bell pepper, chopped
1/4 c. canola oil
3 minced cloves of garlic
1 c. diced onion
1/2 c. chopped parsley
1/4 t. white pepper
1/4 t. paprika

Cook rice to package instructions. Steam squash, zucchini and lima beans until done - add to rice mixture. In medium cast-iron skillet heat oil, add onion, garlic and peppers and saute until soft, but not brown. Add to rice and season with pepper and paprika and additional salt, if desired. Stir in parsley.
