Chicken - Chicken BBQ Ranch Pasta Casserole
1 pound chicken breast
2 tablespoons olive oil
Salt and pepper
1/2 cup Ranch dressing
3/4 cup barbecue sauce
2 cups Colby Jack cheese, shredded and separated
1/2 red onion, diced
2-3 scallions, sliced
1 15-ounce can diced tomatoes
2 cups frozen sweet corn
Parsley, optional
Use 2 tablespoons of oil plus a dash of salt and pepper to sauté chicken over medium heat for 3-4 minutes on each side. (Save time by using rotisserie chicken). While chicken is cooking, boil a large pot of water and partially cook pasta for only 4 minutes. Drain and set aside. In a large bowl, combine cooked pasta, barbecue sauce, Ranch dressing, corn, onion, scallions, tomatoes and 1 1/2 cups of cheese and mix well. Pour mixed pasta into a buttered casserole dish. Top with remaining 1/2 cup of Colby Jack cheese. Bake at 350 degrees F for 25 minutes. Serve.
