Cherokee Eggs & Wild Onions

1c or 2 Dozen Wild Onions or a small batch of young Green Onions or Scallions
2T Water
6 Eggs
1-2t Bacon Grease or Butter or Cooking Spray for frying
Salt and Pepper to taste

After you have fried your bacon for breakfast, use a little of the melted fat to cook the eggs in. Pick or buy young tender wild oniond or green onions or scallions to equal around 1 cup. Coarsely chop the onions. Place the onions and the water in a cast iron fryer. Cover and cook until they are limp. Add butter or grease. Add eggs. Scramble and add salt and pepper to taste. Do not overcook.
