Chicken - Savory Chicken Cacciatore

2 C. flour
1/2 tsp. salt
1/4 tsp. pepper
1 lbs. chicken
2 tsp. olive oil
1 onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1 can diced tomatoes
1/2 tsp. dried oregano
1/2 C. white wine
1 can of corn
2 C. fresh mushrooms, sliced
salt and pepper to taste

Begin by combining the flour, salt and pepper in bag and place the chicken in there. Shake until chicken is evenly coated. Heat oil in a skillet and fry the chicken pieces for about 7 minutes per side. Remove from skillet and set aside. Add the onion, garlic, corn, and bell pepper to the skillet and saute. Drizzle chicken with the wine, tomatoes, and oregano. Then add the lightly cooked onion, garlic, corn, and bell pepper to the chicken. Cover and simmer for 30 minutes over medium low heat. Add the mushrooms and salt and pepper to the chicken skillet and let it simmer for 10 more minutes.
