Burger - BBQ Burger With Coleslaw & French-Fried Onions

2 lbs ground beef, chuck or sirloin
½ cup bottled barbecue sauce
1 teaspoon kosher salt
½ teaspoon black pepper
8 oz sharp cheddar cheese, shredded
1 container french-fried onion
6 each hamburger buns
1 container packaged cole slaw mix
1 whole Red bell pepper, finely chopped
½ cup mayonaise
¼ cup bottled barbecue sauce
1 tablespoon apple cider vinegar
¼ teaspoon Celery seeds
2 teaspoons sugar
½ teaspoon kosher salt
¼ teaspoon black pepper

Prepare Coleslaw. Whisk together mayonnaise, BBQ sauce, apple cider vinegar, celery seed, sugar, salt, and pepper in a large bowl. Add coleslaw mix and red bell pepper to dressing and combine well. Allow to chill until ready to use, best overnight. Combine ground beef, BBQ sauce, salt, and pepper gently in a large bowl. Make sure all spices are distributed evenly without over working the meat. Score the meat with your hands to make 6 portions. Out of each portion, take half and make a small patty in your hand. Put a little less than a tablespoon of shredded cheddar in the center. Take the other half of the ground beef portion and put on top. Work in your hands to make a patty, keeping the cheese sealed in the middle. Continue to make the remaining patties. Make an indention in the middle of each finished patty to ensure it does not puff up while cooking. Grill burgers over medium high heat for 5-6 minutes on each side until desired doneness. Top cooked burgers with coleslaw and french fried onions.
