Brownie - Cinnamon Red Velvet Brownies

1/2 cup butter
1 cup granulated sugar
2 tablespoons cocoa powder
2 teaspoons Pure Vanilla Extract, divided
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 teaspoons red gel food coloring
2 large eggs
1 cup all-purpose flour
4 ounces cream cheese, softened
2 cups powdered sugar

Preheat oven to 350°F. Prepare an 8”x8” baking pan with nonstick cooking spray. In a large microwave safe bowl, melt the butter, then stir in the sugar. Stir in the cocoa powder, 1 teaspoon vanilla extract, cinnamon, salt and food coloring to the butter mixture. Whisk in the eggs, then gently fold in the flour until just incorporated. Pour the batter into the prepared baking pan. Bake for 28-30 minutes. Allow to cool. In a medium bowl with an electric mixer, beat the cream cheese for 30 seconds. Beat in the powdered sugar and 1 teaspoon vanilla extract. Beat until well combined. Once the brownies are cooled, spread the cream cheese frosting over the brownies. Serve and refrigerate leftovers.
