Pizza - Thai Shrimp Pizza 🇹🇭

A little about categorizing bread. Our system is not scientific by a long shot. We've placed them into table, flat, dessert, and fried. Table bread may include loaves of sandwich-type bread or something designed to serve as a loaf or dinner bun at the table. Flat is generally un-yeasted bread that is flat (duh!). Fried can be pan-fried or deep-fried. Dessert is for delectables such as banana bread. The words dressing and stuffing are interchangeable, depending where you live. Many will contain bread, others may not. This is dizzying.

2 12" pizza crusts or homemade dough
Thai Peanut Sauce:
1 cup peanut butter
1/2 cup coconut milk
2 tbsp water
2 limes juiced
4 cloves garlic minced, separated
2 tbsp ginger
4 tbsp soy sauce
2 tbsp fish sauce
1 tsp red pepper flakes
1/4 cup pickled jalapeños chopped (See Note 1)
1/4 cup cilantro chopped
Pizza Toppings:
3 green onions chopped
1/2 cup roasted and salted peanuts
olive oil
2 cups Mozzarella cheese
2 cups Pepper Jack cheese
1 cup carrots shredded
1 lb shrimp raw
2 tbsp Chili Paste Sambal Oelek

Preheat grill or oven to 350°F. In a large bowl whisk together the peanut butter, coconut milk, water, lime juice, 2 cloves of crushed garlic, ginger, soy sauce, fish sauce, red pepper flakes, jalapeños, and the cilantro until a smooth consistency. Set aside. In a small pan with some olive oil quickly sauté the shrimp on both sides with remaining 2 cloves of crushed garlic and the red chili paste for several minutes. Remove from heat and set aside. Brush the bottom of the crust with a light layer of olive oil or cooking spray. Divide and spread the peanut sauce on top of the pizza dough(s) or crust(s) evenly and to the edges. Top with the cooked shrimp, cheeses, carrots, and green onions. Place the pizzas one at a time on a stone or baking sheet if going in the oven OR right on the grill with grill grates and bake/grill for 8 minutes. If you don't have either you can place a sheet pan that with fit inside the BBQ grill. Top with fresh chopped cilantro, peanuts and cut into slices.
