Pudding - Parmesan Corn Pudding
1/3 cup sugar
1/4 cup flour
2 Tbsp yellow cornmeal
6 Tbsp butter, melted
1-1/2 cups milk
4 eggs
1/2 cup grated Parmesan cheese
Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray. Set aside. Place 1 package of corn in a food processor. Add sugar, flour, cornmeal, salt, butter, milk and eggs. Process until smooth. Stir in remaining package of corn. Pour mixture into prepared pan. Sprinkle with Parmesan cheese. Bake, uncovered, for 40 to 45 minutes.
