Great Depression Casserole

4 slices bacon, chopped
1 medium bell pepper, chopped (about 1 cup)
1 large onion, chopped (about 1 cup)
1 tablespoon garlic, minced
1 (15-ounce) can pork and beans (undrained)
2 (15-ounce) cans chili with beans
1 1/2 pound bologna, cut into 1/2 inch cubes
1 cup shredded Cheddar cheese

Preheat oven to 400 degrees F. Lightly grease a 3-quart deep baking dish. In a large deep skillet over medium high heat, cook bacon until it is browned and crisp, about 5 minutes. Add bell pepper, onion and garlic and continue to cook and stir another 5 minutes until the vegetables begin to turn translucent. Add the bologna and cook for 5 minutes or until edges begin to brown. Stir in pork and beans and chili. Pour mixture into the baking dish, top with the cheese and bake for 20 minutes until it is bubbly and the cheese is melted.
