Copycat Chipotle Cilantro-Lime Rice
4 cups water
1 bay leaf
1/4 cup diced cilantro
2 tablespoons lime juice
1 teaspoon olive oil
1 teaspoon salt
Add rice, water, and bay leaf to medium saucepan. Bring to a boil. Reduce to a simmer and cover. Cook for 15 minutes or until water has absorbed. Remove from heat and let sit, covered, for 5 minutes. Remove bay leaf from rice and discard. Stir in cilantro, lime juice, olive oil, and salt.
