Margarita - Pineapple Habanero Margarita

What's the difference between a cocktail and a drink? Hell, we don't know! As near as can be said, a drink is alcohol, a mixer, and (or not) ice. A cocktail is something carefully constructed using different ingredients and with finesse. Sometimes, but not always, cocktails are served in stemware, fancy glasses. You be the judge.

Margarita - Pineapple Habanero Margarita

1 cup tequila silver
1 cup triple sec
1 cup fresh-squeezed lime juice
2 1/2 cups pineapple juice
4 habanero chiles
Optional garnishes: salt, limes, habaneros, pineapple slices

Place a small skillet over medium heat. Cut the habaneros in half and remove the seeds. Place the chiles in the skillet and blister on both sides. Turn off the heat. Pour the tequila, triple sec, lime juice, and pineapple juice in a pitcher. Stir well. Add the blistered habaneros. Let them sit in the margarita mix anywhere from 15 minutes to overnight. The longer they soak in the mix, the spicier it will be. Taste the mixture after 15 minutes to determine how long you want to soak them. Remove the habaneros, when the spice level is to your liking. When ready to serve, pour the margaritas into glasses over ice. Garnish with lime wedges, pineapple slices, or additional habaneros.
