Mackerel - Mackerel Patties #3

3 tins of mackerel
2 small green peppers
2 small red onions
3 small potatoes
2 large eggs
2 tbsp Old Bay seasoning
1 cup flour (for coating)
ketchup, mayo or seafood sauce (optional)

Cut peppers, onions and potatoes into chunks and place in a food processor or blender. Chop finely and transfer to a mixing bowl. Drain mackerel tins (or other fish) of any liquid or oil and place in blender. Add eggs and seasoning to it. Chop until mixture appears homogenous and nearly pureed. Transfer to bowl with chopped vegetables and mix until ingredients appear well incorporated. Using your hands or gloves, make medium-size patties and coat each side of patties in flour. Fry in hot oil until browned and crisp, about 3 minutes each side. Serve with ketchup, mayonnaise or any other sauce or condiment of your choice.
