Pineapple Mojito

What's the difference between a cocktail and a drink? Hell, we don't know! As near as can be said, a drink is alcohol, a mixer, and (or not) ice. A cocktail is something carefully constructed using different ingredients and with finesse. Sometimes, but not always, cocktails are served in stemware, fancy glasses. You be the judge.

Pineapple Mojito

1 oz. mint simple syrup
4 large and fresh mint leaves
1-1/2 ounce Blanco rum
2 oz. tonic water
3 oz. pineapple juice
2-3 pineapple chunks for garnish
Fresh sprig of mint for garnish
Ice

To make cocktail add four (4) large mint leaves and the mint simple syrup into the bottom of the glass, muddle the mint leaves with a standard muddler, pressing with downward and twisting turns to release the oil from the mint leaves. Once this is finished add the Blanco rum and pineapple juice. Using a long-handled bar spoon vigorously mix the ingredients for thirty (30) seconds. Now add the ice until the glass with halfway filled with ice, top with tonic water and serve.
