Chicken - Bourbon Chicken

2 lbs boneless, skinless chicken breasts
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon ground ginger
1/2 teaspoon red pepper flakes
1/4 cup brown sugar
1/4 cup soy sauce
2 tablespoons hoisin sauce
1 tablespoon apple cider vinegar
1/3 cup Chicken Broth
1 tablespoon cornstarch
Cooked white rice, for serving
Chopped scallions, for garnish

Cube chicken into 1/2-inch pieces. In a large skillet over medium heat, add olive oil. Once hot, add chicken and cook for 5 to 6 minutes, stirring regularly, until mostly cooked through. Meanwhile, stir together garlic, ginger, red pepper flakes, brown sugar, soy sauce, hoisin sauce, vinegar, chicken broth and cornstarch. Whisk well to combine and pour over chicken. Simmer for 3 to 4 minutes, stirring constantly, until sauce thickens and chicken is cooked through. Turn heat down to low and simmer 2 to 3 minutes longer until sauce reaches desired consistency. Serve chicken over white rice garnished with scallions.
