6 hard boiled eggs, peeled and rinsed
3 teaspoons Creole-style mustard
2 tablespoons mayonnaise (more if desired)
2 tablespoons pimentos, chopped
1 tablespoon hot sauce
1 tablespoon chopped spicy dill pickles (more if desired)
1 dash Cajun seasoning to taste (Slap Ya Mamma, Tony's, etc.)

Cut your eggs in half and remove the yolks. Combine the yolks with all the other ingredients and mash them with your fork, seasoning to taste. You can use Louisiana Hot sauce for a milder version, or Tabasco for a spicier version. Now, put the mixture back into the egg whites and you're done.
