Creamed Tomatoes on Toast

The home-canning recipes are not for amateurs, but to be used by those with experience and knowledge of how to safely can food and properly use equipment. See your local county extension service on classes and information before you EVER attempt to home-can food. Our parents and grandparents did it - so can you!

1 quart canned tomatoes (or 1 quart tomato juice, if you prefer a smoother texture)
2 Tablespoons butter or margarine
1 cup milk
2 Tablespoons flour
Salt, pepper, sugar

Pour tomatoes into a saucepan and add butter. Simmer over medium heat about 15 minutes, (If using juice, heat to simmer.) Mix milk and flour until smooth then add to tomatoes, stirring well. Add salt, pepper, and sugar to taste. If it's too thick, add a little more milk. If it's too thin, low simmer until it is a thick as you like or add a little more flour/milk mixture to the tomatoes. Serve over toast.
