Cucumber - Cold Cucumber Soup #2

Vegetable dishes are generally filed according to the primary or main ingredient. This is not an exact science but in the case of some vegetable salads, we'll put a copy here if it has another main vegetable component other than basic salad ingredients. NOTE REGARDING PICKLES & FERMENTED: Pickled and fermented vegetables are filed here; pickled or fermented fruit, meat and seafood are filed in their respective categories. Additionally, all beans (including green and wax) are filed in the bean category.

Cucumber - Cold Cucumber Soup #2

2 large cucumbers, peeled, halved and seeded
1 1/2 cups plain Greek yogurt
1/4 cup olive oil
1 lemon, zested and juiced
1 clove garlic, finely chopped
1 tablespoon finely chopped fresh dill
1/4 cup loosely packed flat-leaf parsley
1/2 teaspoon salt
1/4 cup chopped purple onion
1/2 cup chopped tomatoes

In a blender, puree cucumbers, yogurt, lemon juice and zest, olive oil, garlic, dill, parsley, and salt until smooth. Pour into serving bowls. Top with tomatoes and purple onion. Serve immediately.
