Chocolate Covered Blueberries

4 ounces fresh blueberries about 3/4 cup
2/3 cup dark chocolate chips
2 tablespoons sweetened shredded coconut

Wash and completely dry the blueberries. Set 12 muffin cups on a plate or tray. Place 6-7 blueberries in the bottom of each muffin cup. Place the chocolate in a glass dish, heat in the microwave for 90 seconds at 50% POWER. Stir and heat an additional 30 seconds at 50% POWER, if needed. Stir to finish dissolving the chocolate. Spoon the melted chocolate over the berries. Lightly spread the chocolate over the berries with the back of a spoon. Sprinkle with coconut. Place in the refrigerator for 30 minutes, or until the chocolate has set firm.
