Italian Green Bean Salad
1 (10-oz) package cherry tomatoes, cut in half
1/2 tsp minced garlic
salt and pepper, to taste
6 Tbsp olive oil, divided
1 (3-oz) package sliced prosciutto, chopped
1 (8-oz) package fresh mozzarella pearls
1/4 cup lemon juice
Preheat oven to 450ºF. Toss green beans, tomatoes, and garlic with 3 Tbsp olive oil. Season with salt and pepper. Place on rimmed baking sheet and bake for 20 minutes. Combine cooked beans and tomatoes, prosciutto and mozzarella pearls.
Whisk together lemon juice and remaining 3 Tbsp olive oil. Season with salt and pepper. Toss with green bean mixture.
Transfer salad to a large platter. Season with more salt and pepper, if desired.
