Corn - Jalapeno Popper Corn Salad
4 cups corn kernels, cooked and cooled
1 cup sour cream
1 cup mayonnaise
2-oz cream cheese, softened
2 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 tsp paprika
1 cup shredded cheddar cheese
1 cup shredded pepper jack cheese
1/2 cup cooked, chopped bacon
salt and pepper, to taste
Chop jalapenos, discarding membranes and seeds. Combine jalapenos with remaining ingredients. Chill for 2 hours before serving.
