Corn - Cucumber Corn Salad
¼ cup olive oil
½ teaspoon salt
½ teaspoon freshly ground black pepper
½ cup chopped fresh basil
½ cup chopped fresh mint
½ cup chopped fresh chives
4 cups chopped fresh cucumbers
1 ½ cups fresh corn kernels
In a large bowl whisk together lemon juice, olive oil, and 1/2 teaspoon each salt and black pepper. Stir in herbs, cucumbers, and corn. Cover; chill at least 1 hour. Season with salt and pepper. Makes 10 servings.
