Poor Man's Stew

1 lb ground beef, browned and drained
1.5 lbs potatoes, diced large
3 carrots, sliced
1 onion, diced
1 garlic clove, minced
1 (6oz) can tomato paste
2 cups water
1 t salt
¼ t pepper
1 t onion powder
1 t dried oregano

Combine all ingredients in a 5 qt or larger slow cooker. Give it a quick stir, cover, and cook on low 6-7 hours.
This stew is filled with lots of wholesome goodness, so there isn’t much to worry about. If you want to try to reduce your carb intake, you could always omit the potatoes and toss in some extra carrots and onions. You could also replace them with some cabbage, green beans, or maybe even some asparagus. The possibilities are endless!
