6 eggs
1/2 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon garlic powder
1-2 tablespoons powdered chile (such as caribe, chipotle, jalapeno or other)
2 tablespoons bacon drippings
1-1&1/2 cups water (as needed)
Optional: shredded cheddar cheese, a can of diced green chiles
Scramble eggs and set aside. Mix all dry ingredients in a small bowl. In a heavy nonstick frying pan over medium heat melt the bacon drippings and gradually add the dry ingredients, stirring constantly, until well blended. Add the scrambled eggs and mix thoroughly. Add a bit of water, still stirring, until of a nice thick gravy consistency, about 5 minutes. Serve over toast, fried potatoes, tortillas, just about anything.
