CHICKEN SALAD:
2 cups cooked chicken
1/4 cup chopped celery
1/3 cup chopped cucumber
2 chopped hard boiled eggs
1/2 cup mayonnaise
1/2 cup catsup
1 tbs. unflavored gelatin
1/2 cup chicken broth
1/2 tsp. salt
1/8 tsp. pepper
POTATO SALAD:
2 cups cooked and diced potatoes
1/2 cup chopped celery
1/2 cup petit pois (small green peas)
1/2 cup mayonnaise
1/3 cup chopped cucumber
2 tbs. chopped onion
2 tbs. chopped green pepper
2 chopped hard boiled eggs
1 tbs. unflavored gelatin
1/2 cup chicken broth
1 tsp. vinegar
1/2 tsp. salt
1/8 tsp. pepper
Combine all ingredients for chicken salad, except the gelatin and broth. Soak gelatin in the broth, place for a few minutes in a double boiler and add to chicken salad. Pour into a mold greased with oil and allow to set in the refrigerator. Follow the same method for potato salad, adding the gelatin soaked in broth and place for a few minutes in a double boiler. Pour potato salad over well-set chicken salad and allow this to set. Remove from mold and garnish as desired.
