Ribs - Grilled Honey-Garlic Pork Ribs

2 racks of ribs (back, side, or St Louis will all work with this recipe)
For the rub:
1/2 cup brown sugar
2 tablespoons dry minced garlic
2 tablespoons basil
1 tablespoon white pepper
1 tablespoon smoked paprika
1 teaspoon salt
Optional if you like fiery rubs:
1 tablespoon red pepper flakes
For the sauce:
1/2 cup honey
2 tablespoons minced garlic
1 tablespoon ginger
1/4 cup dark brown sugar
3 tablespoons soy sauce

Preheat grill to 350 degree F. You will be cooking the ribs over indirect heat so be sure to set up zoned cooking areas. One side should have heat and one side should not. The side you're cooking on should have a temperature of 350 degrees F to make these correctly. Remove the membrane (silverskin) from the back of the ribs. Use a knife to pull a corner free and pull by hand. Use a paper towel if you can't get a good grip. Pull away and discard. In a small bowl mix all the ingredients for the rub. Apply to ribs on all sides and rub to coat evenly. Shake off excess. Place the racks on the grill over indirect heat. Close lid and cook for 1 hour, checking them occasionally. Don't open the lid too much as it affects the temperature which affects cooking time. Flip the ribs over and cook for 30 minutes more. In a medium size bowl combine all the ingredients for the honey garlic sauce. Whisk until smooth. Once the ribs have cooked for 1 and 1/2 hours it's time to apply the sauce. Slather sauce over the ribs then move to direct heat for 3 to 5 minutes. Flip the ribs over to add sauce to other side, then cook for 3 to 5 minutes more. Remove from grill and allow to stand for about 5 minutes, if you can wait that long. Chop the ribs and place on platter.
