Meatloaf - Green Tomato Meatloaf

2 lbs. ground beef (90/10)
1 cup bread crumbs
1/2 cup chopped onion
2 medium green tomatoes, diced
2 eggs
3/4-1 cup evaporated milk (whole milk or half and half)
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon ground coriander
1-2 cups of water
1 cup ketchup
1 tablespoon mustard
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar

Preheat oven to 350 degrees F. Spray a deep dish baking dish with a nonstick cooking spray; set aside. In a large bowl, combine all the ingredients, except for the ketchup, mustard, brown sugar, Worcestershire sauce, and mix until well blended. Be careful not to handle the meat mixture too much. Shape into a round bun and place in the baking dish. Pour water a third of the way up in the dish. Bake in the oven for 1 hour. In a small bowl, mix together ketchup, mustard, brown sugar, and Worcestershire sauce. Spoon ketchup mixture over the meatloaf and return to the oven for another 15 minutes.
