1 stick pepperoni; diced, 1/4-inch cubes
1 package instant rice
1 can spinach, drained well
About 4 cups chicken broth
Cook the packet of instant rice and drain. In another pan cook diced pepperoni with chicken broth. Add the rice and the well-drained spinach. Heat thoroughly before serving. Cubed beef or chicken may be substituted if desired.
